I don't bake often, but when I do, I make these gluten-free peanut butter cookies. I always make a double batch. They're so good that I have to hide them, from my husband and the dog!
Preheat your oven to 350 degrees.
In a large bowl, combine all of the ingredients. Using a melon baller (you can use a regular old spoon but a melon baller yields more cookies!), drop dough onto cookie sheet. Bake for 6-8 minutes.
