This stuff is so good you will want to make extra just to be able to have a light lunch the next day, well if you don't eat it all ! Light and refreshing, its perfect for hot miserable days when you just don't want to eat much or when you just want an alternative to snack food. Serve with good corn chips and a margaritas.
You will need
In a large bowl combine your salad shrimp, imitation crab meat, tomatoes, onions, cilantro, parsley, garlic and jalapeño and mix well. Pour in your lime and lemon juice, olive oil, salt and pepper to taste, stirring lightly to combine. Cover and place in the refrigerator for at least two hours before serving to allow the flavours to come together. Serve with good corn chips or pita chips.
