These are by far the most requested cookie I bake. A must-cook for Valentines Day, Thanksgiving, and Christmas. A chocolate lover's dream, for sure.
Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
In a double boiler, melt semisweet, chopped chocolate, stirring constantly, until smooth. If you don't have a double boiler, a pot of hot water with a metal bowl placed over it works just as well.
In a large bowl, mix together egg whites, cream of tartar, vanilla, and pinch of salt. Beat mixture forms soft peaks. Add in sugar, beating until stiff peaks form. Fold in melted semisweet chocolate and milk chocolate chips.
Drop spoonfuls of batter, about 1 inch apart, on baking sheets lined with parchment paper. Bake for 8-10 minutes. Allow cookies to cool slightly and then transfer to cooling rack. Note: cookies will appear dry, but I promise, they are filled with gooey deliciousness inside.
