I'm not sure which I love more, the flavor of rosemary or the scent. I grow rosemary every year because I love cooking with it so much. This recipe is a breeze to toss together, a little bit of prep before you leave for work and you have a quick meal ready-to-cook when you get home.
Mix together lemon juice, olive oil, rosemary, garlic, salt and pepper (to taste) in gallon-sized bag. Add chicken thighs and allow to marinade 6-8 hours (perfect for a work day!) Remove chicken thighs (reserving marinade). Place marinade in medium-sized sauce pan and bring up to a boil for 4 minutes.
Preheat broiler. Arrange chicken thighs, skin side down, on a baking pan (take care not to crowd chicken). Broil for seven minutes on each side, for a total of 14 minutes.
Reduce oven temp to 350 degrees, baste with marinade and cook through until chicken juices run clear (about 10 minutes).
