I love chicken legs but my guy thinks they're "nibble" food. Meaty thighs are the perfect compromise - he feels thighs are more more filling and I get my dark meat. I always throw this together in the morning and when it's time to cook dinner I can have it in the pan, cooking in minutes. A favorite weeknight recipe, for sure.
Combine olive oil, garlic, lemon juice, red wine vinegar, oregano and salt-n-pepper in a large ziplock bag. Add thighs and marinade in the fridge for 8-12 hours.
Preheat oven to 425 degrees. Arrange chicken thighs on a baking sheet, leaving a bit of room between each piece and roast for 30 - 40 minutes or until juices run clear and chicken is crispy. Enjoy!
