We do chicken dishes a few times a week here at least. This one is so good the only complaint I ever here is there wasn't enough! I usually toss a few heads of garlic in with the chicken to roast while its baking for extra garlicky goodness.

In a sauce pan mix melt your butter. Once melted mix in your olive oil, soy sauce, minced garlic, rosemary and parsley. Cook on low for 1 - 2 minutes until garlic is tender and you can smell the herbs. Remove from heat.
Grease a baking dish and arrange chicken, making sure to leave a bit of space in between each piece. Brush the butter / olive oil mixture onto the chicken, reserving some for basting. Bake for 30 minutes or until juices run clear basting at least once more about half way threw.
