On days I know I'll be away from home all I day, I prep this recipe in the morning so I'll have to do is toss it in the oven when I get back. It makes for a relaxing, hassle-free night. In fact, the recipe is better after it's been baked and allowed to sit. If you can throw it in the oven before leaving for the day all you have to do is nuke it when you get home. Boom! Dinner is served.
Preheat oven to 350. Grease a large baking dish and set aside.
Cook pasta according to directions found on the package and drain.
In a large skillet, on medium heat, fry beef, onions, green pepper, garlic, and mushrooms until the meat is browned and the veggies are softened. Stir in your pasta sauce and Italian seasoning, stirring frequently to allow flavors to meld (2-3 minutes). Allow to cool.
Combine sauce mix, pasta, eggs, ricotta cheese, parmesan, and melted butter. Toss to coat well.
Add spaghetti/sauce mix to a large baking dish and smother with mozzarella cheese. Cover with aluminum foil and bake for 30-40 minutes. Uncover and bake for another 20-25 minutes. Enjoy!
