It's amazing how easy making your pasta can be, even if it is gluten-free. I use this recipe when I'm making lasagne and If I have a house full of kids I let them help, too. They each get a nice long lasagne noodle and can stuff their own for Lasagne rolls (sauce, cheese and their choice of goodies) so even picky little eaters are happy and content. You can even cut them into fun small shapes to add to soups!
You will need:
Place the flour in a large bowl and add in zanthan gum. Mix well. Add in eggs and water and mix. Knead to form a ball and work for a few minutes, then form into a log. Wrap with plastic wrap and allow to rest for an hour.
After your dough has rested, uncover and flour well. Now, you can either roll your pasta into strips for lasagne, cut into thin strips for noodles, or roll into sheets for stuffed Ravioli. I do it by hand, so if you have a pasta machine, follow the instructions that came with it.
Lasagne Roll Ups
Have your lasagne noodles ready. In a sauce pan, brown your burger, add in your sauce and simmer for 15 minutes. Allow to cool. Mix in ricotta cheese and egg, stirring to combine. Cover a lasagne noodle in the sauce mix, add your choice of fillings, top with a sprinkle of Mozzarella cheese and roll up before placing in a prepared baking dish. Cover with more sauce and Mozzarella cheese (if the kids are making their own, let them sprinkle something over top so they know it's theirs to avoid any confusion after baking) and bake for 30 minutes until cheese has browned and everything is hot and yummy.
Ricotta Cheese Stuffed Ravioli
Mix together your ricotta filling and place in the fridge for 30 minutes to firm up.
When firm, lay out your sheet of pasta and brush half with egg wash. Drop 1 tablespoon of pasta filling every two inches onto the egg washed side. Fold over and pat down around your filling to seal, then cut with a knife into squares. Check edges to make sure they are seals. Place ravioli in boiling water. When it floats remove from the boiling water and top with your choice of sauce and parmesan cheese.
Buttered Noodles with Parmesan Cheese
Place pasta in boiling salted water and cook for 4 minutes. Drain and toss with melted butter and parmesan cheese, sprinkle with green onions and season to taste.
