I love salad and come spring and summer it's almost a daily thing in our house with dinner. This salad is dinner all on its own and a nice change from the basic garden style salad we are all so used to.
What You Will Need:
Wash and dry your greens. Chop and place in a large bowl, mixing to combine. Chop your tomatoes, peppers, cucumbers and onions and add on top. Sprinkle with cheese.
In a large skillet, fry your bacon until crispy. Remove from the pan and onto a plate with some paper towels to drain and cool. Add in your sliced potatoes, salt and pepper. Cook until brown on all sides and done throughout. Remove and let cool for a bit. Add to the top of your salad and top with crumbed, crispy bacon. Serve with your favorite dressing.
