If you would have told me that watermelon would be found on restaurant menus under the soup or salad section, I would have probably assumed it was a typo of some sort. Lately, though, I've been pleasantly surprised to see so many amazing recipes that feature this juicy summer fruit as a main ingredient.
This healthy chilled soup includes watermelon, basil, and tomatoes along with some other amazing flavors. Chef Anthony Stewart of the Pritikin Longevity Center + Spa in Florida created this recipe for their menu and now you can easily serve this one up at home.
