Hunting season is right around the corner and I will be banned from the woods soon, for safety reasons. Thankfully, though, our friends down the road always bring us venison to make up for it ;)
Honestly, I'm really not all that fond of it. Turn it into jerky, though, and even I can't get enough of the stuff! I also make it with beef when I have extra on hand that I need to use up. It's a great snack and a great carry-along for hiking, camping or just to munch on when you feel the need. Best of all, you don't need a dehydrator to make it. The oven works just fine :)
You will need:
Slice your meat as thin as possible across the grain. In a large ziplock bag, mix together your soy sauce, Worcestershire sauce, brown sugar, garlic powder, black pepper, onion powder and pepper flakes. Place sliced meat into the mixture, seal well and allow to marinade for 24 hours.
Place over oven rack on the highest level and cover your bottom rack with aluminium foil to catch any drips. Pre-heat your oven to 150 degrees.
Using a large bowl with a colander inside, dump out your meat strips, and allow to drain for 30 minutes to remove any excess moisture.
Insert round toothpicks through the tops of the strips of meat, and hang them from the oven rack. Bake in pre-heated oven for 4 hours, or until dried to desired consistency.
This works great in a dehydrator if you have one!
By the way...This is addictive, so you may want to make up a double batch because you won't be able to stop eating this stuff.
